DIET AND FITNESS: ARE WE CHOOSING THE RIGHT FOODS?
The richest people on earth ? Americans – do not eat a healthy diet. It’s not because we haven’t the money but because we simply do not know better, or we ignore the facts. Two of three Americans eat high-fat, high-sugar foods that may increase their risk of cancer, heart and liver disease, obesity, diabetes, stroke, and high blood pressure.
But large numbers of Americans, perhaps as much as a third of the population, are improving their eating habits, responding to the guidelines laid down by government agencies and health organizations.
These health-conscious eaters are consuming fewer calories but more fruits, vegetables, grains, beans and low-fat dairy products. They are cutting down on fats, limiting sugar and salt, and switching from beef, lamb, and pork to chicken, turkey, and fish.
The American Way
There is no longer a typical American eating pattern, according to the Community Nutrition Institute in Washington, D.C. Five distinct eating styles emerge, some healthy, some unhealthy. The good news, says Dr. Rodney Leonard, executive director of the nonprofit institute, is that “people are moving away from the traditional American meat-eater pattern.” Dr. Leonard analyzed Department of Agriculture data and reports that beef eating dropped 20 percent since 1975, with an equal shift toward poultry.
Betty Peterkin, an associate administrator at the U.S. Department of Agriculture Human Nutrition Information Service, points out, however, that “we need red meat for zinc because it is one of the better food sources of zinc.” She adds, “Without red meat, it is difficult to get a diet that has all the vitamins and minerals.”
The Fat Issue
Without question, one of the major culprits in the American diet is fat. Up to 43 percent of the calories we eat every day comes from fat-almost half of our total daily intake of food energy. These figures come from Drs. Helen Guthrie of Pennsylvania State University and Annemarie Crocetti of the New York College of Medicine. They examined data from the Department of Agriculture on the eating patterns of 21,579 adults. Three of four people ate more than 35 percent of their calories in fat.
Many studies show that a high fat intake goes with higher rates of heart disease and probably of cancer. Guidelines issued jointly by the Department of Agriculture and the Department of Health and Human Services-and adopted by such major health agencies as the American Heart Association and the American Cancer Society-recommend that daily fat intake be below 30 percent of total calories.
